PURPOSE:To obtain a healthy beverage, excellent in flavor and useful in the food field by adding a prescribed amount of water to bean-curd refuse, fermenting the resultant mixture under prescribed conditions, then separating a semitransparent liquid by filtration, quick heating the liquid to a prescribed temperature, allowing the liquid to cool, dissolving adequate amounts of vitamin C, etc., therein and further allowing the prepared mixture to cool. CONSTITUTION:The objective healthy beverage is obtained by adding 5-10 pts. water to 1 pt. commercially available bean-curd refuse, sufficiently stirring the resultant mixture, keeping the stirred mixture for 20-25hr while warming the mixture at 35-42 deg.C, then transferring the mixture to a cylindrical container, allowing the mixture to stand, subsequently separating a semitransparent liquid by filtration, quick heating the liquid, stopping the heating when the temperature attains >=80 deg.C and allowing the liquid to cool, in this case, adding and dissolving adequate amounts of vitamin C and sugar therein when the temperature attains <=60 deg.C, allowing the mixture to cool or further adding a suitable fruit juice or, without addition thereof, allowing the mixture to cool. |
