PURPOSE:To obtain the title paste or liquid anti-forming agent suppressing foams caused by boiling, etc., and eliminating the foams in production of TOFU or soybean milks, comprising a polyricinoleic acid ester, a soybean phospholipid and an inorganic salt as essential components. CONSTITUTION:The objective anti-foaming agent comprising (A) a polyricinoleic acid ester (e.g. ester of polyricinoleic acid ester of 3-5mols polymerized ricinoleic acid and glycerin, etc.), (B) a soybean phospholipid (e.g. lecithin) and (C) an inorganic salt as (preferably calcium carbonate, calcium phosphate, a calcium silicate, magnesium carbonate, magnesium phosphate or magnesium silicate) as essential components. |
