In the process for the production of hard sweet compounds from sugar or sugar substitutes a prepared aqueous solution is heated to boiling point in a continuous-flow heater (1), evaporated at atmospheric pressure in an evaporation chamber (2), further evaporated at underpressure in a vaccum chamber (4), during which process it cools, and finally mixed with additives in a mixer (7). In order to process a solution of sugar substitutes requiring a higher boiling temperature than sugar, a cooling device (20) is fitted to the vacuum chamber (4) in which the solution is additionally cooled at underpressure by thermal conduction. The solution is taken from the evaporation chamber (2) to the cooling device (20) and thence into the vacuum chamber (4). Rotating, scraper-like distributor components (30) are arranged in the cooling device (20) to reinforce the heat exchange process.
