a) The invention relates to a method for sanitizing, in liquid phase, a reservoir as well as to a device for implementing this method, b) method characterised by the following stages: water is introduced into the reservoir (1); this water is circulated in a closed circulation circuit (c) containing the reservoir (1) and a heat exchanger (5); the pH of this water is lowered; its temperature is raised; circulation is maintained for a predetermined period; the water is transferred into a closed cooling circuit (d, c) containing the reservoir (1) but not the heat exchanger (5); the temperature is gradually lowered by means of the injection of cold water; and the reservoir is rinsed. <IMAGE>
