PURPOSE:To decrease the manufacturing cost by dividing a sample into two parts in the rear of a sample injecting port, arranging a specified second column in one flow path, joining two flow paths at the rear side of the column again, passing the sample through a specified first column, and detecting the sample with a specified detector. CONSTITUTION:Meat to be measured is processed by a heat extracting method or by a solvent extracting method. Thus the sample of meat juice is obtained and injected through a sample injecting port 3 with a microsyringe. The mixture of inosinic acid, inosine and hypoxanthine is divided into two flow paths with a pump 4. The inosinic acid of the mixture which has passed through a delay flow path 3 is decomposed into inosine with 5'-nucleotidase in a second column 6. When the mixture passes through a first column 7, the total amount of the inosinic acid, the inosine and the hypoxanthyine is detected with an oxygen electrode 8. For the mixture which has reached the column 7 directly through the branched flow path from the pump 4, only the inosine and the hypoxanthine are decomposed, and the total amount of the inosine and the hypoxanthine is detected with the oxygen electrode 8. Then a Ki value which is the index of freshness can be detected. |
