摘要 <p>NEW MATERIAL:An yeast defective in vacuole-forming ability, having mass transfer modification or osmotic pressure sensitivity and brew suitability. EXAMPLE:Saccharomyces cerevisiae No.133 (FERM P-11269). USE:Useful for producing wines high in the content of physiologically active components such as glutathione and excellent in quality. PREPARATION:Firstly, a strain defective in vacuole-forming ability of Saccharomyces cerevisiae (e.g. Saccharomyces cerevisiae KL-197-12B) and a yeast for brewing are mutually put to back cross by an established means. Thence, the resultant strains are screened for fermentativity, proliferativity and glutathione-delivering ability, thus selecting the objective strain.</p>
