发明名称 PRODUCTION OF FRUIT JELLY
摘要 PURPOSE:To obtain a fruit jelly capable of retaining freshness of fruits in a high state by filling the washed fruits and a jelly liquid dissolved by heating in a packaging container with a lid, hermetically sealing the container and then subjecting the packaged fruits and jelly to pressurizing treatment through a pressurizing medium. CONSTITUTION:Fruits 4 and jelly 5 as contents are filled in a packaging container 2 hermetically sealed with a lid material 3 to provide a fruit jelly 1. The aforementioned fruit jelly is produced by the following method. That is, the fruits 4 are washed and placed in the packaging container 2 and the jelly liquid 5 dissolved by heating is filled therein. The packaging container 2 is then hermetically sealed with the lid material 3. The resultant fruit jelly package 1 is subsequently pressurized through a pressurizing medium in a pressurizing apparatus to sterilize the fruits 4, jelly 5, packaging container 2 and lid material 3. At least, either of the lid material 3 and the packaging container 2 preferably has flexibility in at least part thereof. The pressurizing medium can be suitably selected from water, silicone oils, etc., according to the kind of the contents, usage of the package, etc.
