Next, the strain A is inoculated in a liquid medium (B) containing glucose, peptone, phosphate and vitamins, etc., and left or subjected to aerobic stirring cultivation at pH4-7 and 15-35 deg.C for 1-30 days to obtain a cultured substance (C). Fruit bodies or mycelia in the component C are homogenized and solubilized by crushing with a supersonic treatment, etc., then collected by centrifugation or filtration, etc., thus, the objective prolylendopeptidase-inhibiting substance is produced.
