PURPOSE:To enable to process and store a salt-free or salt-reduced fish meat or animal meat having the flavor and tissue of the raw meat and effective for preventing hypertensive, etc., by adding a fermentable saccharide and an alcohol fermentation yeast to the raw meat and brewing the mixture. CONSTITUTION:A raw meat is mixed with a fermentable saccharide and an alcohol fermentation yeast and subsequently brewed. The fermentable saccharide may be any one of fermentable saccharides such as glucose, fructose, sucrose, starch and lactose and preferably glucose, fructose or sucrose. The saccharide is added in an amount of 4-40wt.% based on the total amount of the raw materials. The fermentation yeast includes Saccharomyces cerevisiae, Saccharomyces carlsbergensis and Saccharomyces fragilis. The yeast is added in a yeast cell number of >=10<4> cells/g, preferably approximately 10<6> cells/g, per g of the raw meat of the raw material. |
