PURPOSE:To obtain a shortening having a smooth texture, good consistency and luster by an easy method, by incorporating a specific fatty acid ester with an edible fat or oil containing a solid fat or oil. CONSTITUTION:An edible fat or oil containing 30% or more solid fat or oil, e.g. palm oil, beef tallow or hardened oil of rapeseed oil, soybean oil, etc., having >=30 deg.C melting point as a raw material fat or oil is incorporated with 0.3-7%, based on the fat or oil, (poly)glycerol ester of polymerized castor oil fatty acid of the formula (R is H or fatty acid acryl group derived from castor oil fatty acid; n is the polymerization degree of glycerol) and prepared by the conventional method to give the aimed shortening showing smooth texture and good consistency and luster. In case 30% or more solid fat or oil is incorporated, the conventional emulsifying agent is incorporated to prepare rough crystals without giving a smooth product. The use of the above-mentioned fatty acid ester provides the aimed good product. |
