A machine for use in slaughterhouses comprises a fixture 5a, 5b, 5c, 5d, which is designed to be able to fix a carcass in a vertical position, and a carriage 22 with means 21, 23 for moving and controlling the carriage 22 in the vertical position along the backbone of a carcass fastened in the fixture. The carriage is provided with tools 25, 26, 27, 28, which can cut into a fixed carcass and separate the muscles on a level with spinous processes. On the carriage 22 there are drive devices 24a, 24b, 24c, 24d, which can move the tools 25, 26, 27, 28 independently of one another towards the back of the carcass. By means of the machine, carving and dressing out of pig carcasses can be performed automatically before they are split down the middle. The procedure can be performed by fixing a carcass in the vertical position in the fixture, and whilst at the same time moving the tools on the carriage vertically, automatically performing the following processes: - cutting through the rind in a cut along the back centre- line, from the tail area to the neck area of the carcass - cutting through the fat layer along the same line and severing sinews on a level with the middle of the backbone - freeing the flat bones by simultaneously cutting on both sides of these - separating muscles and spinous processes. the tools being actuated independently of one another in relation to the carcass. <IMAGE>
