Storage stable fruit prepns. contg. whole fruit, without preservatives, are produced by mixing free-rolling fruit with crystalline sugar or very conc. sugar solns. and making the mixt. heat stable involves, (a) carefully keeping the mixt. in movement until the dry mass of the fruit is 35-65 wt.%, (b) carefully sepg. the fruit from the juice, (c) adjusting the density of (part of) the juice to about the density of the sepd. fruit, (d) combining the treated juice with the fruit again, to form a mixt. in which the fruit floats evenly, (e) passing the mixt. thorugh a microwave heater which has a homogeneous distribution of energy over the whole section of the tube, and (f) finally cooling the mixt. opt. collecting it together, and storing under sterile conditions.
