PURPOSE: To easily provide good-quality flakes in a short time by drawing the strand of expanded and puffed dough extruded from an extruder cooker through a thin and flat slit-shaped opening, cutting that strand and roasting it later. CONSTITUTION: Inside an extruder cooker 11 having a hopper 10 and two screws 12 and 13, dough premix is made thermoplastic and extruded from a discharge nozzle 14 having slit openings 14 and 16 having the depth from 0.25mm to 0.75mm and the width from 10mm to 100mm at the speed of 10-24m/min., and an expanded and puffed dough strand 17 is drawn by drawing rollers 18 and 19 until dough strand density becomes 75-200g/1 (drawing is performed by accelerating strand speed from 1.2 to 2.0 times.) Then, the desired flake-shaped texture of weak stratification is provided, cut into final flakes by (longitudinal) cutting rollers 20 and 21 and (lateral) cutting rollers 23 and 24 and roasted by a roaster 27 such an electric oven until the moisture becomes 1-4% so that the target flakes can be provided. |
