The present invention relates to a method for obtaining a methionine Nα-acetyltransferase, by means of the expression of a suitable cell, in such a way as to obtain a product essentially free of natural contaminants. A methionine Nα-acetyltransferase enzyme was identified in yeast. The existence of the enzyme defines a gene for methionine Nα-acetyltransferase which can be cloned or altered. The cells expressing the normal or variant forms of this enzyme constitute important tools for determining the amino acid sequence of non- characterized proteins. These cells are also important tools for the expression of a recombinant protein which lacks an acetyl group in its α-amino group.
