<p>The invention concerns a method for marking a product covered by a protective layer comprising fatty substances and proteins, such as a ham covered by its rind. According to this method, a means of marking (4) is brought against the protective layer (2). The method is characterised in that the marking means (4) brought against the protective layer (2) is a protein-based product, such as casein or a sheet of collagen, and in that the marking means (4) and the protective layer (2), at least in its area carrying the said marking, are exposed to an environment having a high level of humidity.
