PURPOSE:To provide the titled composition soluble in cold water, preparable without using an emulsifier, having excellent taste, suitable for the preparation of dessert cake at home, and composed of granules containing gelatin, sugar and oil or fat and having a specific particle diameter. CONSTITUTION:The objective composition is obtained by compounding e.g. (A) 5-20wt% gelatin (e.g. of 100-350 Bloom), (B) 50-85% sugar, (C) 5-45% oil or fat, and if necessary, (D) 0-10% emulsifier (e.g. propylene glycol monostearate) and (E) 1-30% protein, and granulating >=50% of the composition to granules having particle diameter of 10-50mu. |
