PURPOSE:To efficiently obtain the subject compound useful as a flavor improver, etc., by inoculating a yeast into a nutrient culture medium containing ribulose, etc., ribose, etc., ribose phosphate, etc., added thereto and culturing the yeast. CONSTITUTION:A yeast [e.g. soy sauce yeast (Zygosaccharomyces rouxii ATCC 13356)] is inoculated into a nutrient culture medium containing preferably 0.5-7.0wt.% ribulose, ribulose 5-phosphate, sedoheptulose 7-phosphate, xylulose and ribose, xylulose 5-phosphate, ribose 5-phosphate or 6-phosphogluconic acid and then cultured at preferably 20-40 deg.C and pH4-7 for 1-10 days to produce and accumulate the objective compound in the aforementioned culture medium. The resultant compound is subsequently collected. |
