A cellular mass of glucose isomerase (which can conform to BP 1516704 or USP 3980521) is activated by the incor poration of at least 0.05 wt. % (on the dry base) of Fe in the form of a water-sol., non-toxic, pref. solid. Fe salt after incorporation of the Fe, the glucose isomerase is converted into particle form and dried. At least 0.5 wt. % MgO, w.r.t. the dry wt. of the cellular mass, and 2 wt. % of solid glucose are pref. mixed with the Fe before addn. to the cellular mass. The mass is then extruded into granules. The prod. is used to isomerise glucuse. The method avoids the use of (toxic Co), at the same time allowing the Fe to be introduced with the enzyme, and causing it to remain firmly bound throughout the use of the enzyme. |
