PURPOSE:To obtain the titled cream having excellent palatability because of its fine texture and high over-run, and having high preservability, by mixing custard cream continuously and quickly with whipped cream in closed state. CONSTITUTION:Whipped cream prepared by whipping the mixture of e.g. butter, sugar, emulsifier, etc. with water, is supplied together with custard cream to a mixer, and mixed continuously and quickly in closed state to obtain the objective cream. The ratio of the custard cream to the whipped cream is preferably 50-40:10-50. |
