PURPOSE:To prevent the generation of cracks after the preparation of soy malt, by carrying out the first and the second stirring by conventional method to accelerate the proliferation of the malt, and carrying out the mixing of the malt substrate actively at the initial stage of cracking. CONSTITUTION:In the preparation of the malt for soy, the first and the second stirring of the malt is carried out according to the progress of the malt preparation. Thereafter, the revolution of the mixing means 2 composed of the plural cutting edges 4 attached to the circumference of the shaft rotating with a driving means is decreased, or the revolution of the rotary culture bed 1 is increased. The stirring pitch of the edge 4 of the stirring means 2 is made relatively large according to the relative relation between the rotations of the stirring means and the culture bed by this process, and roughly disintegrated malt substrate is obtained. Accordingly, the evaporation of water from the malt substrate can be suppressed, the aeration resistance is decreased, and the crack generation can be prevented. |
