<p>PURPOSE:To obtain an antioxidant widely useful in the field of food, cosmetic, drug, etc., by removing flavor from roasted coffee beans with carbon oxide of liquid or supercritical fluid and extracting the roasted coffee beans with water and (or) polar organic solvent. CONSTITUTION:Roasted coffee beans are treated with carbon oxide of liquid or supercritical fluid to remove a flavor. The separated flavor component is used as a flavor agent, the extracted residue is extracted with water and (or) an organic solvent (e.g. ethanol) and optionally the extracted solution is concentrated to give an antioxidant. Since the prepared antioxidant does not contain a flavor component, the antioxidant is used for preventing oxidation of edible fats and oils, preventing fading of natural or synthetic dyestuff, preserving freshness of fish and shellfish and other wide uses without limiting an amount of the antioxidant used.</p> |
