PURPOSE:To readily remove hydrogen peroxide autogenetically present in a food by adding catalase to the food. CONSTITUTION:A food freed of hydrogen peroxide by adding catalase thereto. The catalase is a relatively stable enzyme; however, it is preferred to preserve the catalase in a dried powdery state in a cold dark place for stable preservation thereof. Thereby, the catalase is advantageously blended with dried milk powder, powdery seasoning, etc., more desirably preserved in a refrigerator and, as necessary, added to coffee or a dish. |
