The present invention relates to the field of cheese-making. The process of the invention consists in projecting (10, 10') from the bottom upwards, under high pressure, a liquid (washing solution, rinsing water) via the underside of the mould (4), so as to expel the pouch (20) out of the mould, and at the same time to remove incrustations of cheese adhering to the pouch which may have been formed during the removal from the mould. A unit for removal from moulds and washing comprises an elevating element (6) intended to penetrate through the opening in order to expel the cheese (19) via the upper face of the mould and means (5) for conveying the moulds to the elevator (6), each mould passing the other from the inlet of the unit for removal from moulds (1) up to the outlet of the washing unit (2).
