EDULCORANT DERIVED FROM L-ASPARTIC OR L-GLUTAMIC ACID AND ITS PREPARATION PROCESS

This invention relates to a new edulcorant and its preparation process. This new edulcorant is a 2-substituted acyl derivative of L-aspartic or L-glutamic acid and follows the general formula (I); R being an acyl group with the formula (II) and R' a group with the formula (III); R1, R2, R3, X, Y, Z having varied significations. This new edulcorant is essentially caracterized by a high edulcorant capability and high stability compatible with industrial conditions of use and can be used in particular for sweetening fizzy drinks.
