PURPOSE: To enable reduction in energy cost at the time of removing the bitter taste of soybeans by subjecting soybeans to hot gas treatment in a vortically flowing bed and thereafter, subsequently further subjecting the treated soybeans to secondary treatment in a heating vessel for a longer period of time. CONSTITUTION: In this method that is intended for removing the bitter taste of soybeans and involves exposing soybeans to a hot gas stream of >=100 deg.C (supplied through a supply port 6) in a vortically flowing bed 2, the soybeans are exposed to the gas of >=140 deg.C in the vortically flowing bed 2 and subsequently, subjected to secondary treatment in a heating vessel 9 for >=10min without raising the temp. to a value higher than that of the hot gas treatment. A this time, a best result is obtained by performing these treatments so as to satisfy at least any one of the following conditions (a) to (e):(a) exposing soybeans to a gas of 250 deg.C maximum temp., particularly 220 deg.C maximum temp., or more particularly 210 deg.C maximum temp. in the vortically flowing bed 2; (b) exposing soybeans to a gas of >150 deg.C in the vortically flowing bed 2; (c) subjecting soybeans to secondary treatment especially in an insulated heating vessel 9 for 10 to 60min, particularly 20 to 40min, or more particularly about 30min; (d) prior to the beginning of the secondary treatment, preheating the heating vessel 9 to >=100 deg.C, or particularly 120 deg.C (by a preheater 20); and (e) supplying soybeans having a >=10wt.% initial moisture content, or particularly a 11 to 13wt.% initial moisture content to the vortically flowing bed 2, wherein if necessary, the soybeans are pre-moistened (by a pre-moistening device 1) before supplying them to the bed 2. |
