PURPOSE:To effectively utilize a waste liquor which is difficult to treat and obtain a nucleic acid seasoning containing 5'-guanylic acid by culturing a mold of the genus Monascus in a waste liquor of 'SHOCHU' (low-class distilled spirit) using potatoes as a raw material, producing a nuclease, adding ribonucleic acid thereto and subsequently carrying enzymic hydrolysis. CONSTITUTION:A mold belonging to the genus Monascus is transplanted to a waste liquor of 'SHOCHU' using potatoes as a raw material and aerobically cultured to produce a nuclease. The resultant culture solution is then separated by filtration to remove microbial cells. The obtained filtrate containing the nuclease is subsequently regulated to pH5.5 and warmed to 65-70 deg.C. RNA is added thereto to carry out enzymic hydrolysis and produce a 5'-nucleotide. Thereby, the objective nucleic acid seasoning is obtained. |
