PURPOSE:To obtain a food and drink having new taste, comprising noncaloric beta-glucooligosaccharide (reduced material thereof) having bitterness. CONSTITUTION:A bitterness containing saccharide composed of a glucooligosaccharide comprising beta-glucoside bond, such as gentioligosaccharide such as gentibiose, gentitriose or gentitetraose as a main component and a small amount of cellobiose, etc., and/or a sugaralcohol prepared by reducing the end glucose residue thereof is used as a glucide for improving taste to produce various kinds of foods and drinks. The amount of the beta- glucooligosaccharide blended is 0.5-50wt.%, preferably 1.0-30wt.%. |
