PURPOSE:To obtain a bacterial plaque decomposition composition effectively and efficiently preventing dental caries, suppressing fixation of Streptococcus mutans in the oral cavity and new formation of bacterial plaque, containing endodextranase produced by a bacterium belonging to the genus Arthrobacter. CONSTITUTION:A bacterial plaque decomposing composition containing endodextranase produced by a bacterium [e.g. Arthrobacter globiformis W31 strain (NRRLB-4428)] belonging to the genus Arthrobacter. Endodextranases I and II obtained by culture using dextran as only one carbon source are used as the endodextranase. Addition of asparagine to a medium increases productivity of endodextranase. The composition contains endodextranase and alpha-amylase.
