PURPOSE:To enable production of gamma-polyglutamic acid containing >=90% L-isomer and development of a drink agent consisting essentially thereof by culturing Bacillus NATTO belonging to Bacillus.subtilis in a culture medium composed of specific ingredients. CONSTITUTION:Bacillus NATTO, such as Bacillus.subtilis, belonging to Bacillus.subtilis is cultured in a culture medium, consisting essentially of four ingredients of an amino acid source, such as glutamic acid, a carbon source, such as glucose, an inorganic substance, such as phosphate, and biotin and containing <=0.2ppm or no manganese ions at about 30-45 deg.C temperature. The resultant culture solution is then purified by an alcohol precipitation method, etc., to provide gamma-polyglutamic acid, having >=90% L-glutamic acid content and 5000-1000000 average molecular weight and soluble in water. The obtained gamma-polyglutamic acid as a drink agent is added to fruit juice beverages, sports drinks, etc. As a result, viscosity is imparted to the beverages to improve taste and drinkability thereof. |
