Globular powdered fat with food quality additive is prepd., from edible tallow with its low m.pt. fraction removed by pressing. - To 100 pts. wt. (all other figs. also pts. wt.) prepd. tallow 0.0001-0.05 rancidity inhibitor, 3-5 emulsifier pref. lecithin or derivs. of lecithin, opt. 0.1-2 flavouring and/or colouring agents and 0.0001-0.01 vitamins, trace elements and respectively biocatalysts are added. (A). The homogenised mix is sprayed into a cooled space to polymer globulars having added 0.3-5 inorganic or 177-20 organic tack inhibitor previously or (B.) While spraying into the cooled space, globules formed are coated by a fluidized dustings mix representing 0.3-5 wt.% inorganic and/or 17.7-20 wt.% organic anti-tack agent. |
