PURPOSE:To provide a central syrup for a confection, stable to the temperature change, and having good storage stability without the deterioration of the flavor thereof, by adding an amino acid, a derivative or salt thereof to the central syrup for the confection. CONSTITUTION:An amino acid, e.g. 2-pyrrolidone-5-carboxylic acid, a derivative thereof, e.g. 1-methyl-2-pyrrolidone-5-carboxylic acid, N-acetylglycine or N- acetylalanine, or a sodium potassium or ammonium salt thereof is mixed with a central syrup consisting of corn syrup, starch syrup, sucrose, water, etc. to give a central syrup for a confection, e.g. chewing gum. |
