PURPOSE:To efficiently obtain a dressing-like food excellent in flavor, nutritional balance, etc., by adding a treated vegetable and/or fruit, edible fats and oils, brewed vinegar and emulsifiable substance to a lactic acid fermentation liquor of a dairy product and emulsifying the resultant mixture. CONSTITUTION:A prepared aqueous system of a dairy product (e.g. cow's milk or skim milk powder) is sterilized and precultured normal lactic acid bacteria (e.g. Lactobacillus.bulgaricus) for food are added thereto. Lactic acid fermentation is then carried out to produce a lactic acid fermentation liquor. A treated vegetable (e.g. tomato or carrot) or/and fruit, edible vegetable fats and oils (e.g. salad oil) or/and edible animal fats and oils, brewed vinegar and an emulsifiable substance (e.g. xanthan gum) are added to the obtained lactic acid fermentation liquor. The obtained mixture is sufficiently mixed and further emulsified to afford the objective mayonnaise-like food. |
