PURPOSE:To locally roast foods in a short time by using a surface combustion burner having a large radiation quantity at a heattreating part of surface treating line of food. CONSTITUTION:Foods 2 on a conveyor 1 are transported at a given speed and fed to a surface combustion burner part 3 having a main body 6 of burner which is composed of a sintered material of metallic fibers having 50-95% voids and is arranged to cover an opening of a heat-resistant frame 5. Then air introduced through a filter 8 is sent to a blower 9 of a gas feeder 7, mixed with a fuel gas sent through a gas flowmeter 10 and ignited. The mixed gas is burnt in a red heat state in fire attached to the surface of the main body 6, the surface of the foods 2 is heated by radiation heat of the gas and forcedly exhausted from an exhaust pipe 13 having a fan 12. On the other hand, the foods 2 with the heated surface are introduced into a cooler 4 having a shielding wall 11 surrounding the conveyor 1 and cooled by air sent through the filter 8 and a fan 16 to a cold air feed pipe 15. |
