PURPOSE:To obtain the title moderately soft food with chewiness through such processes that sliced potatoes are heated in hot water and then dried, part of which is coarsely crushed, the rest being ground, the whole product is then cooled, incorporated with ingredients and flavors etc., formed and then frozen. CONSTITUTION:Sliced potatoes are heated under normal pressure in hot water at temperatures below the boiling point for 14-20min. and then dried, about 40wt.% of which is coarsely crushed to a size of 5-25mm, the rest being ground; the whole product is then cooled, incorporated with ingredients, flavors, spice, oily fat etc., formed and then frozen, thus obtaining the objective food 1 where the ground base 2 and coarse granules 3 dispersed in the base are present at the weight ratio (3:2). |
