In the process of the invention, surface-active ether-carboxylic acid/polyol esters of the formula (I): [RO-(CmH2mO)x-(CnH2nO)y-CH2-COO]z-(A) in which R is an alkyl or alkenyl group with 6-22 C-atoms or a p-alkylphenyl group with 6-15 C-atoms in the alkyl group, m and n independently of each other are 2 or 3, x and y independently of each other are 0 or numbers between 1 and 30, z has an average value of 1-2 and (A) is a hexitol, hexitol anhydride or hexitol dianhydride, are produced by the esterification of hexitols anhydrides with ether-carboxylic acids, preferably in the absence of catalysts. The products are particularly suitable for use as emulsifying agents.
