PURPOSE:To provide an edible film having excellent strength and physical properties, soluble in hot water and good heat sealability by containing a polysaccharide mainly comprising carrageenan, a mixture of solid and liquid polyhydric alcohols and water as main components and having a water content of <= a specific value and a limited weight ratio of the polysaccharide/polyhydric alcohol. CONSTITUTION:A polysaccharide mainly comprising carrageenan is dissolved in a polyhydric alcohol aqueous solution having a weight ratio of water/ polyhydric alcohol of 99.8/0.2-80/20. A film is formed from the aqueous solution and subsequently dried into a water content of 25% to provide the objective edible film. The polyhydric alcohol must be a mixture of a liquid polyhydric alcohol and a solid polyhydric alcohol at room temperature. The weight ratio of both the polyhydric alcohols is preferably 3/1-1/3. The edible film has excellent blocking resistance as well as the above-mentioned characteristics. |
