PURPOSE:To provide a colored seasoning, having an excellent aroma of soy sauce and colorful color tone and hardly discoloring even in preservation at ambient temperature by adding and mixing a small amount of brewed soy sauce and colorant with a liquid having the aroma of the soy sauce. CONSTITUTION:A distillate liquid obtained by vacuum distillation of soy sauce or a liquid produced by diluting commercially available soy sauce flavor with water, etc., and having aroma of the soy sauce is prepared. Small amounts of brewed soy sauce and a colorant are then added and mixed with the above- mentioned liquid having the aroma of the soy sauce to produce a colored seasoning. Dark or light colored soy sauce, etc., is used as the brewed soy sauce and the amount thereof added is preferably about 0.1-10 pts.vol. based on 100 pts.vol. liquid having the aroma of the soy sauce. A colorant nontoxic to food sanitation is used as the colorant and Food Red No.2. Food Yellow No.4, etc., are cited as specific examples thereof. The resultant colored seasoning is preferably used for various dishes, foods, etc. |
