PURPOSE:To obtain the subject substance having higher added value as a food additive, a cosmetic component, etc., by heating a primary allyl alcohol or its ester in an organic solvent in the presence of an acid sulfate. CONSTITUTION:The objective compound of formula II can be produced by heating a compound of formula I (R is alkyl or alkylidene; R1 is H or CH3; R2 is H or acetoxyl; dotted line represents the presence or absence of a bond) or its ester at 40 to 130 deg.C in a solvent (e.g. ketones or esters) in the presence of an acid sulfate (e.g. potassium, sodium or ammonium hydrogen sulfate). The above process can form linalool from geraniol and trans-1(7),8-p- menthadien-2-ol from perillyl alcohol. |
