Method and device for the thermal treatment under controlled atmosphere of products in liquid or pasty form, particularly food products, characterised in that it includes a vessel 1 equipped with heating means and the general shape of which matches a volume of revolution, the direction of which is slightly inclined with respect to the horizontal, the angle of inclination being less than 30 DEG and preferably less than 20 DEG ; and the vessel comprises, on the inside, an agitator 14 including at least one blade 15, 15' forming a scoop (shovel) itself provided with a concave part for gathering and displacing products capable of penetrating into the mass of the products via its border 20c, 20b forming an edge thereby preventing any aggressive treatment of the treated medium 7, the blade in the ascending part of its path being capable of discharging the products taken up towards the rear part of the vessel. <IMAGE> |
