In a process for cleaning and deodorising aqueous enzyme solutions obtained by the fermentation of bacteria or fungi by the in situ production of a water-insoluble deposit, the adsorption of undesired admixtures to this deposit and subsequent solid/liquid separation is intended to improve the light colour of the enzyme solution and the quantity of enzymes. This is achieved by adding to the enzyme solution, set and maintained at a pH of between 5 and 11, an acid aqueous solution of an aluminium salt and, if desired, other precipitating agents and a separating off water-insoluble components, whereby a masking agent selected from the group: boric acids and/or their water-soluble salts; sulphurous acids and/or their water-soluble salts; hydroxycarboxylic acids and/or their water-soluble salts; multivalent alcohols may be added.
