摘要 PURPOSE:To obtain a black rice bun with a filling having a high nutritive value, nourishing and roborant action, various treating effects, etc., by covering an inner filling material containing cooked and/or steamed black rice with a bun dough consisting essentially of wheat flour and/or rice flour. CONSTITUTION:The objective black rice bun with a filling obtained by, e.g. washing black rice (scientific name; Oryza.sativa L.) with water, then dipping the washed black rice in water for about 30 min to 6hr, subsequently adding 50-120 pts.wt. water to 100 pts.wt. black rice, cooking the black rice in the same manner as that for normal glutinous rice or dipping the black rice in water for 6-24hr, then steaming the dipped black rice in a steaming basket, etc., subsequently adding and mixing a seasoning and ingredient materials prepared in a suitable size with the black rice treated as described above, cooking or steaming the resultant mixture to prepare an inner filling material for the black rice bun with the filling, wrapping the above-mentioned inner filling material with a bun dough consisting essentially of wheat flour and/or rice flour and steaming the resultant bun using a steamer, such as the steaming basket, preferably over a strong fire for about 5-30min. The aforementioned black rice bun with the filling has SUGI (Japanese cedar)-like fragrant flavor and assumes adzuki bean-like dark-red color and unconventional unique taste.
