<p>Bones are removed from meat by two press bodies moving together, so as to squeeze the meat out sidways. Round one body is a cutting edge, working with a mating edge on the other so as to cut the meat off the bone. In the face of one body is a recess for the remaining meat, the edges flowing its irregular periphery. One of the press faces in the working direction protrudes beyond the cutting or mating edge round it, so that with the press open the distance between the faces is less than that between the edges. Between one of the bodies and the mounting of the edge surrounding it is a spring acting in the working direction. This when predetermined pressure is reached the string body deflects rearwards sufficiently for the edges to come into contact.</p> |
