METHOD FOR PURIFYING KESTOSE

PURPOSE:To obtain a low-carious kestose having growth promoting effects on Lactobacillus bifidus in high yield for a short time by carrying out successive colloid removal, hydrolytic treatment of by-product reductive monosaccharides and desalting of a kestose-containing liquid according to a specific method. CONSTITUTION:CaO is initially added to a kestose-containing liquid and the resultant mixture is heated at 60-80 deg.C to precipitate a colloidal substance. The resultant precipitates are then filtered off and the obtained liquid is subsequently heated to 80-90 deg.C. CaO is then added to regulate the pH to 12-12.5. Thereby, reductive monosaccharides are hydrolyzed. pH of the above-mentioned liquid is subsequently regulated to 8-9 by introduction of gaseous carbon dioxide and the excess CaO is simultaneously precipitated. The obtained liquid is finally subjected to desalting treatment with an ion exchange resin to purify the kestose.
