The device intended for peeling fruit, vegetables or the like has a blade-like peeling body (1), on which there are formed stop edges running transversely to its movement direction during handling and cutting edges (5, 6) running parallel thereto but, during peeling, projecting with respect to the stop edges by a distance corresponding to the peel thickness. The stop edges on the peeling body are formed, in the case of this device, on two mutually opposite sides as stop strips (8, 9), to each of which is assigned a respective cutting edge (5, 6) at varying distances, these cutting edges pointing in opposite directions. <IMAGE>
