When producing yeast protein, the fermentation is carried out as a two-stage process. After a first fermentation stage, the resulting yeast mass is divided into two streams by means of fractionation. One of the part streams principally contains mature protein-rich yeast cells, which are used in a manner known per se, while the other part stream principally consists of immature viable yeast cells and substrate. The second part stream is conducted to a second fermentation stage, and an additional carbon source and nutrient salts are added to the substrate. |
