<p>PURPOSE:To obtain plum wine improved in yield of an alcohol at a low cost without requiring complicate and expensive equipment and process by adding water to a slurry like material obtained by crushing a fruit of Japanese apricot and supplying water and sugar to the slurry like material and fermenting the mixture. CONSTITUTION:A slurry obtained by crushing a fruit of Japanese apricot is preferably subjected to low-temperature sterilization and treated with pectinase and water is added thereto and sugar is supplied thereto. Then mineral or vitamins such as magnesium sulfate, potassium phosphate, diammonium phosphate or calcium pantothenate is preferably supplied to the mixture as a fermentation auxiliary and the mixture is fermented to provide the aimed wine.</p> |
