Process for producing fatty acid glycerides, in which at least 40 wt.%, in particular at least 50 wt.%, of the fatty acid residues are derived from fatty acids with 18 to 22 carbon atoms and more than three olefinic double bonds, in particular from omega-3-fatty acids, by transesterification of mixtures of fatty acid methyl esters or fatty acid ethyl esters with corresponding composition of the fatty acid residues with glycerin in the presence of basic catalysts under an inert gas. No appreciable isomerization of the double bonds in the fatty acids occurs if anhydrous sodium carbonate is used as the basic catalyst.
