A meat knife mark making device is provided to form knife marks of different directions on upper and bottom surfaces of the meat by changing the posture of the meat during transferring the meat. A meat knife mark making device is composed of: a base frame(110); a conveyor(120) installed at the base frame to move along an endless track; a first knife unit(130) installed above the conveyor to form knife marks on the upside of the meat transferred on the conveyor; a second knife unit installed under the conveyor to form knife marks on the bottom side of the meat transferred on the conveyor; and a guide unit(150) disposed between the first and second knife units to change the transfer posture of the meat delivered by the conveyor, by restraining the meat.
