<P>PROBLEM TO BE SOLVED: To provide an ink-jet ink which can be suitably used for inhibiting a curling of printed matter satisfactorily and also exhibiting satisfactory discharge stability. <P>SOLUTION: The ink-jet ink which comprises water, a coloring agent, a water-soluble organic compound (1) and a water-soluble organic compound (2), wherein the content X (mass%) of the water-soluble organic compound (1) is 10 mass% or more relative to the total amount of the ink-jet ink, and the content X (mass%) of the water-soluble organic compound (1) and the content Y (mass%) of the water-soluble organic compound (2) relative to the total amount of the ink-jet ink satisfy the relationship of the following formulas (I) and (II): (I) 0<Y/X≤0.9, (II) X+Y≥15 mass%. The water-soluble organic compound (1) exhibiting the difference between a water retaining ability in a circumstance of a temperature of 23°C and a humidity of 45% and a water retaining ability of 36% or less in a circumstance of a temperature of 30°C and a humidity of 80%.
