The process is characterised in that it consists in removing the heart or hollowing out the fruit or vegetables in order to remove the central part or core, in cutting the said fruit or vegetables into rings or quarters depending on the configuration of the final product to be obtained and then in making them progress continuously in a heating and drying assembly comprising an alternation of heating and cooling zones and finally in bagging the product thus obtained.
